Bitton's professional football journey started in July 1997 when he signed up as a trainee at FC Ashdod in the Premier League in Israel. His debut season (2009-2010) saw him making 21 appearances and scoring one goal. His stint at the Israeli club would see him record 122 appearances and 14 goals till the end of the 2012-2013 season.
In August of 2013, Bitton was roped in by Celtic for a transfer fee just shy of £700,000. Bitton's tenure at Celtic was quite prolific.
