Beginning his professional career in July 2017, Apostolos joined Adelaide United in the A-League as a trainee, down under in his native Australia. The following season saw him make an equal number of appearances, although his goal tally was more impressive, with thrice the number of his previous haul.
July 2019 saw a move to Western United, elsewhere in Australia's National Premier Leagues (NPL). There, he put on the team colours in ten league matches during the 2019-2020 season.
Apostolos started 2021 with a shift in allegiance, transferring to Newcastle United Jets, another club within the A-League's fold. With the Jets, his 2020-2021 season saw him score three goals in 12 matches. However, his performance skyrocketed during the 2023-2024 term. In 25 first team appearances, he netted a whopping 17 times.
Following his successful stint at Newcastle, Apostolos briefly switched continents, joining Rodos in Greece's Football League in August 2021 before moving on to PAS Giannina in the same division the subsequent July. During his single season with PAS Giannina (2022-2023), he turned out 17 times on the pitch.
The Greek adventure was rather short-lived as Stamatelopoulos returned to his previous club, Newcastle United Jets, in July 2023. His performances stayed steady, scoring three goals in 12 matches during the 2020-2021 season, before upping the ante in the 2023-2024 season with 17 goals in 25 matches.
Then in July 2024, Apostolos made his move to Scotland, joining Motherwell for a fee of approximately £221k, as per the exchange rates of that time. During the 2024-2025 season, he made 16 first team appearances and scored five goals in league matches. As for the current season (2025-2026), he's had 14 trot outs on the pitch so far and found the back of the net five times.
